Yogurt Cheese Parfait

Ingredients
6 cups Stonyfield Fat Free Plain Yogurt1 cup sugar
1 tablespoon finely grated lemon zest
2 cups fresh raspberries, blueberries or hulled and sliced strawberries
Directions
The day before serving or early in the day, stir the yogurt and the sugar together. Let this mixture drain for 4 to 6 hours to make yogurt cheeseAdd the grated lemon zest to 2 ½ cups of yogurt cheese and mix well. Reserve any extra yogurt cheese for another use. Spoon the yogurt cheese into 6 parfait glasses, alternating with layers of fresh berries. If the yogurt cheese is too thick, it can be thinned slightly with additional yogurt.
